Clementine Sorbet

Ingredients
  • 3 lb clementines
  • ¼ tsp lemon juice
  • 1 tbs liquid pectin
  • 8 packets stevia (PureVia)
Instructions
  1. Peel the clementines, and remove as much of the white pith as possible.
  2. Juice the peeled clementines in a juicer, or, alternatively, blend and strain them.
  3. This should yield about 2 cups of juice. Dispose of the remaining skins and seeds.
  4. Add stevia and pectin to the juice and mix well.
  5. Pour the liquid into an ice cream maker.
  6. Allow the mixture to chill for about 20 minutes, scraping the blade and stirring frequently.
  7. Serve immediately or transfer to a sealed container and freeze.
